Crunchy-tender sticks of courgettes and carrots, lightly pickled in spicy brine. Try as an appetizer or side dish, or stuffed into a tortilla with other tasty bits: shredded meats, melted cheese, saucy beans, etc. Escabeche means ‘pickled’ in Spanish. Other vegetables make excellent escabeche as well - cauliflower, green beans, cabbage - as do chicken and fish, which are often prepared in a similar manner to make a lively first course. (Often the fish is not cooked first but i
