Spiced Courgette and Lime Soup

This soup is spicy, light and extremely low in calories. Don’t let its simplicity fool you into thinking it’s ordinary, however. The tart and spicy broth exudes an exotic fragrance of cinnamon; this is a courgette soup like no other. It is based loosely on the highly seasoned vegetable soups that are doused with lemon or lime and enjoyed throughout Mexico, the Middle East and the Balkans.
