What a bracing bowlful this is: tart with yogurt and citrus juice, the nutty lentils giving texture, and courgettes for garden freshness (if courgettes are unavailable or bitter, simply omit). It tastes vaguely Middle Eastern and very tropical.

As this is a relatively light soup you could follow it with something sustaining and deliciously substantial.
