I threw this together one afternoon as I gazed out of my window; it wasn’t exactly the South Seas - it was Los Angeles - but the palm trees were swaying, the sands were warm, and downstairs was a shop selling the most amazing array of Southeast Asian ingredients.
This makes a smooth-flavoured soup, with just a tiny hit of chilli - increase it if you like. Seafood, or chunks of chicken or turkey, is a good addition to this delicate chowder.
