The inspiration for this recipe is the Polish potato-filled dumpling called pierogi. I’ve spiced it up with mild sweet red chilli and the bite of fresh hot chilli. It’s all encased in the delicate noodle dough, served dripping extravagantly in butter and soured cream.

Using won-ton wrappers produces delicate ravioli in only a few minutes.
