This unusual ravioli is filled with spicy beef such as Estofado, or any meat braised in mild chilli sauce. The plump, stuffed noodles are then topped with a silken sauce of goat cheese that perfectly complements the deep richness and slight bite of the chillied filling. Once again, won-ton ravioli save time for the cook.
The whimsical name is the outcome of a California-style dinner party I once gave 3,000 miles away from California, in New York. T
