Papas a la Huancaina is perhaps the national dish of Peru. There, instead of only a handful of different varieties, there are hundreds of potatoes available. Some are mealy, some waxy, some very high protein, some tiny; they even have a sort of freeze-dried potato that has traditionally been frozen high up in the Andes where the air is thin and cold and the potatoes dry in a particular way.
