Another delicious Peruvian potato dish: massive quantities of lemon juice, onion and olive oil, together with pickled chillies, used to season cold mashed potatoes does, admittedly, sound startling. However, this is one of the most strikingly delicious dishes I’ve ever eaten.

Enjoy as a first course or as part of a party buffet, or to accompany grilled meat or fish. Seafood, chunks of cooked sweet potato, white cheese and corn on the cob are traditional Peruvian accompaniments.
