Huevos Rancheros is simply a tortilla or two, topped with eggs and blanketed with a tomato and chilli sauce (salsa). The firm, bland egg white gives substance to the dish, the yolk runs delightfully into the spicy sauce, and the whole thing is brought to life with the vibrancy of tomatoes and chillies.
