A combination of black beans and eggs, fired up with chillies, is one of the hallmarks of the Yucatecan kitchen. This is a simple dish, once you’ve got the basics: cooked black beans (as in Black Bean Chili), and a fresh and breezy raw salsa as well as a cooked one.
