A combination of black beans and eggs, fired up with chillies, is one of the hallmarks of the Yucatecan kitchen. This is a simple dish, once you’ve got the basics: cooked black beans (as in Black Bean Chili), and a fresh and breezy raw salsa as well as a cooked one. The base may be a soft chewy flatbread such as naan - more Southwestern/Navajo in influence than Yucatecan/Mayan - or bland, earthy corn tortillas. Panuchos would be very good with pita bread a
