The flavours of fruit and chilli balance the richness of duck in this Mayan-inspired dish. Serve the crisp roast duck with steamed rice (if banana leaves are available, wrap al dente cooked rice into banana leaf parcels and steam to cook through and gently flavour the rice), black beans and a salad of nopales (cactus) with crumbled Feta or fresh Pecorino cheese.
