Ingredients: Salt and pepper; 250 ml/8 fl oz soured cream; 4 chicken breasts, boned and skinned; 100 g/4 oz cheese of choice (Fontina, Parmesan, Gruyère, or a combination), grated; 1 tablespoon cumin; 2 tablespoons plain flour; 100 ml/4 fl oz chicken stock; 2 cloves garlic, chopped; 35 g/1½ oz butter; 2 roasted, peeled and chopped mild green chillies, or 1 small can chillies (or sweet red peppers plus 1 medium hot one or dash of Tabasco)

This dish of succulent chicken breasts in creamy chilli-scented sauce will please even those who cannot take much heat. In Mexico any dish with a large amount of dairy products in it is nicknamed ‘Swiss’, since the Swiss are so fond of dairy foods. This is the ‘Swiss’ sauce I once encountered in Taxco, Mexico. It is delicious with plump, boned chicken breasts.
