This dish of succulent chicken breasts in creamy chilli-scented sauce will please even those who cannot take much heat. In Mexico any dish with a large amount of dairy products in it is nicknamed ‘Swiss’, since the Swiss are so fond of dairy foods. This is the ‘Swiss’ sauce I once encountered in Taxco, Mexico. It is delicious with plump, boned chicken breasts.
