Somewhat similar in consistency to Vatapa, with a bread and peanut sauce, this Peruvian dish is based, instead, on chicken. The peanut is believed to have been first cultivated high in the Andes, spreading to even far-off points of the Americas such as Brazil and Chile to become an important part of the Indians’ diet. Like other New World foods, the peanut has made a strong impact on many of the world’s cuisines - Chinese, Southeast Asian and African especially.
