This Caribbean-inspired dish is a simple stir-fry of strips of beef, tiny baby com, and a confetti of multi-coloured pepper strips. The sweet peppers get a fresh kick of chilli, and the richness of the meat is brightened with a splash of lime. Serve with plain steamed rice sprinkled with chopped spring onions and black beans, with a wedge of lime or orange to squeeze over it.
