The Zuni Indians of America’s Southwest were cultivating crops a thousand years before the arrival of the Europeans. From them comes this unusual dish, though the pre-Columbian Indians would have used wild rather than domestic meat. It’s easy to imagine this stew simmering in a clay pot over an open fire in the middle of a mesa. The combination of chillies gives complexity and depth to the flavour.
