This is really a mild chilli- and coriander-flecked version of garlic bread, crusty and fragrant, with the flavourings all melting into the hot bread. The last time I prepared it we sat and ate it greedily, along with a bottle of Sauvignon Blanc, and it went from being an appetizer to the whole supper!

Ingredients

  • 3 cloves garlic, chopped

Method

  1. Purée the garlic in a processor or liquidizer; add the coriander or parsley, spring onion and chilli powder, and process until finely chopped.
  2. Add the butter, olive oil, and salt to taste. Blend until smooth.
  3. Place the bread on a baking sheet; spread with chilli butter then sprinkle with Parmesan cheese.
