Almond and potato pudding is a recipe which appears in different forms in a number of books of Avis’ time. However, it is also one of the few recipes in her manuscript which we know she copied word-for-word from elsewhere. Her source was a book first published in 1864, Anne Eliza GriffithsCre-Fydd’s Family Fare, explicitly aimed at ‘the moderate and economical, yet reasonably luxurious, housekeeper’.
