Soufflé Lord Curzon

This recipe is one of a series with names attached to them, and given its position in the manuscript, it must have been written down by Avis in the mid 1870s. There was no Lord Curzon at the time, but the likely person referred to is Alfred Nathaniel Holden Curzon, 8th Baronet and 4th Baron Scarsdale, whose family name was Curzon but whose title was Lord Scarsdale.
