Queen Drop Biscuits

These easily made biscuits were one of the first recipes the team cooked from Avis’ manuscript after Bob Stride donated it in 2009. They were an instant hit with all of the costumed interpreters, and have stayed on the list of dishes cooked regularly at Audley End ever since. The flavours are similar to those of the ubiquitous 18th-century queen cakes, which were little fruited sponges usually made in shaped tins. They are ideal for kitchen maids learning their trade (or for your own first
