Bath buns started life as Bath cakes, a yeasted, fruited bun, often served hot for breakfast. Jane Austen was a fan, ruefully but enthusiastically referring to ‘disordering her stomach’ with them in 1801. They were originally made with caraway comfits (sugar-coated caraway seeds sold in tins), but by the time Avis wrote down her recipe, comfits were very old-fashioned, and she left them out.
