Flavoured vinegars were very popular in the past and are making a gradual comeback today. Blackcurrant vinegar is excellent for culinary use, as it works well in both sweet dishes (particularly those with figs or other sweet fruit) and savoury mixtures (use it as you would balsamic). In the Victorian era it was also used as the basis of a drink, and a few tablespoons added to still or sparkling water makes a refreshing cordial. Blackcurrants are high in vitamin C and drinks
