This is Verona’s classic dish, made with Amarone from the neighboring Valpolicella wine region. Amarone is a rich, full-bodied red made entirely from dried grapes. A good bottle of Amarone can be rather expensive and, although not quite the same, a very good version of this dish can be made with a good Valpolicella di Ripasso, a less expensive wine sometimes referred to as “baby” Amarone.
