This is a classic Italian salsa verde traditionally served with poached fish. Both the Marjoram and Parsley Sauce and the Thyme and Parsley Sauce would also be very good here.

Ingredients

  • 2 pounds striped bass, halibut, or other fine, firm white fish fillets
  • 1 medium yellow onion

Method

  1. Choose a pot large enough to hold the fish comfortably. Fill halfway with water and place over high heat. Peel and quarter the onion. Peel the carrots and celery. Add the vegetables to the pot and cover it. When the water comes to a boil, add 1 tablespoon salt and
