  • 1 tablespoon vegetable oil

Method

  1. Put the butter and vegetable oil in a braising pan large enough to accommodate the pork and place over high heat. When the oil and butter are hot and the butter is just beginning to turn color, put in the pork. Brown the pork on all sides, then transfer it to a plate and season with salt and pepper.
  2. While the meat is browning, peel, halve, and thinly slice the
