Use New Zealand lamb, which more closely resembles Italian lamb; it is smaller and younger than lamb raised in America. Larger American lamb chops of course will also be quite delicious prepared this way. In Italy lamb chops are trimmed so that you can pick them up by the bone, hence the name scottadito, which means “burn your finger.” You can apply this basic grilling recipe to steaks, pork chops, and boneless chicken breasts as well.
