By the time the meat is done, the anchovies are undetectable but give this dish a distinctively rich flavor. Stracotto in Italian means “overcooked, ” and it’s the long, slow cooking process that makes this beef so tender and succulent.

Ingredients

  • 2 ounces pancetta, thinly sliced
  • 4 anchovy fillets
  • 2 tablespoons

Method

  1. Finely chop the pancetta and anchovy fillets.
  2. Put the olive oil in a heavy-bottomed braising pan and place over medium-high heat. When the oil is hot, put in the meat and brown it on all sides. Remove it from the pan and season with salt and pepper.
