Grappa is made by distilling the grape skins that are discarded after the initial fermentation process in wine making. It is a potent beverage that, when well made, evokes the fragrances of the grapes. Italians drink it straight after a meal, mix a little with their espresso, sometimes use it in cooking, and also steep cherries in it. Fruit with grappa is a wonderful combination with a distinctively Italian flavor. Berries are used here, but almost any fresh, ripe fruit can be substituted.<
