Making a sorbet still requires an ice cream maker but almost any kind will work fine. A key ingredient here is prosecco, a light, barrel-fermented, dry sparkling white wine from the Veneto. It is inexpensive, easily available, and on its own makes for a wonderfully refreshing drink before dinner.

  • 6 mandarin oranges
  • 1 cup water
  • 1 cup sugar
