For me, a good Caesar salad is all about crisp leaves, and I tend to opt for Baby Gem over the more traditional Cos lettuce. As an alternative to mackerel, you could try monkfish, red mullet or sea bass, all of which are strong enough in flavour to stand up to the other salad components: garlic, olives and Parmesan.
Wash and dry the mackerel fillets, checking that all bones have been removed.
If using marinated anchovies, drain them well.
Remove the outer leaves of the lettuce and discard. Take off a few more leaves from each head, wash them well under cold running water and pat dry with a cloth, then place them in a bowl. Cut each lettuce heart in half lengthways.
