Arabella Boxer adapted this recipe from June Platt’s Vogue column in the 1930s and prefaces it with the remark – pertinent here – that it is best made over 2 days, adding that ‘the original recipe calls for 12 pints (6.8 l) of water, but few of us have pans that large.
