Homemade aioli is so easy to make, and once you try it you’ll never want to buy mayonnaise again. We use it on almost all the breakfast sandwiches in this book, but there are tons of things that aioli is good for, including dipping for the Butter and Herb Potatoes, or tossing with pieces of roasted chicken for a homemade chicken salad sandwich. This aioli recipe is also super-versatile. Feel free to add cayenne pepper, curry powder, or your favorite relish
