Roasting tomatoes in the oven with peppers and garlic creates a delicious sweet flavour which makes the most wonderful soup. It can even be used as a pasta sauce for kids who don’t like eating soup!

Ingredients

  • 650 g vine tomatoes
  • 1 red pepper
  • 3 garlic cloves

Method

  1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6.
  2. Cut the tomatoes in quarters and add to a baking tray.
  3. Cut or tear the red pepper into largish chunks and add that to the tray, along with the garlic cloves, peeled but left whole
