This one-pan sausage and rice dish is my go-to on busy evenings. Easy to make, all in one pan and always a hit with the kids! You can use pork, chicken or veggie sausages.

Ingredients

  • ½ tbsp oil
  • 8 sausages
  • 1 onion, diced

Method

  1. Put oil in a large frying pan or shallow casserole dish.
  2. Cut each of the sausages into three (or smaller if you have young children) and add to the pan.
  3. Cook for about 4 minutes until they are browned, turning regularly.
  4. Add the onion, garlic and peppers and cook for another minute.
  5. Add the rice, chopped tomatoes, stock and paprika
