On the dubious principle that anything worth doing can be done at home, I’ve included a recipe for making sushi. Watching the rituals of a seafood samurai behind a Japanese sushi bar is enough to intimidate the most intrepid home cook, but let curiosity overwhelm presumption. Nobody expects you to turn out works of art on a first or even a second try, but to have tried at all is worth comment and meantime you will have learned much about the Japanese.
