Taking the theme of hogget, mature lamb, as an excellent meat for curries and Middle Eastern dishes, here is a very simple cracked wheat pilau.


  • 1 lb lean lamb – cut into ½in cubes
  • 3 oz butter


In a heavy, well seasoned casserole, over a medium-high flame, brown meat thoroughly without the addition of any fat.
