  • 2 lb young fresh broad beans in pods – strings and stems cut off
  • 2 onions – peeled and chopped
  • 5

Method

Wash whole beans thoroughly. Drain. Sauté the chopped onion for a few minutes in the oil in a large, heavy, lidded saucepan over a medium flame, to soften but not colour. Turn heat down to low, add the beans in their pods, the lemon juice, sugar and a pinch of salt. Stir, cover pan and leave to stew for 15 minutes, stirring from time to time.
