A crude Anatolian incarnation of Oeufs Florentine. Wayside caffs on the steppes have dozens of versions, many including minced meat, sweet peppers, tomatoes, spices and, invariably, eggs rock-hard from having stood around for hours. Few dabble with cheese, but this is one I like. The Turkish equivalent of Greek feta is beyaz peynir, literally ‘white cheese’; Caerphilly or Wensleydale are good substitutes.
