This simplest of uses for the valuable black subterranean funghus is also the one which I think best shows off its elusive flavour. Suitable for vegetarians.
Cover scrubbed but unpeeled potatoes with cold salted water. Bring to the boil. Lower heat, cover pan and leave at a lively simmer until cooked. Take out of water and leave until thoroughly cold. Pull off skin and slice potatoes quite thickly.
Heat butter or oil over medium-low flame in a heavy, preferably cast-iron frying pan (this should either be non-stick or used sufficiently to hav
