This dish originates in the land of Kashmir. It has a special mode of preparation, which greatly enhances its taste and lends to it an individual character. The chops are first simmered in milk which imparts to them a sweet and pleasant flavour. The full flavour can however only be achieved if an exceedingly thin layer of batter is used in the process of frying.
