Ingredients: 2 tablespoonfuls peanut oil (salad oil or clarified margarine or vegetable ghee may be used as substitutes); A little black pepper (kali mirch); 2 green chillies (sabz mirch); 2 ozs (60 g) carrots (gajjar); ⅓ pt (180 mils) tomato sauce or tomato Ketchup; ¼ pt (120 mils) stock or water; ¼ teaspoonful salt; Green stalks of one spring onion; 2 ozs (60 g) onions; 1 teaspoonful salt; 8 to 12 ozs (230 to 340 g) lean pork (undercut); 2 tablespoonfuls vinegar (sirka); 1 oz (30 g) flour; 1 whole egg or 2 egg whites; 4 tablespoons water; 1 dessertspoonful arrowroot; 1 dessertspoonful sugar; Sweet and sour sauce as required; Batter as required; A little red pepper; 2 tablespoons soya-bean sauce
