Bhatura is a fried bread popular for breakfast or as a snack at teatime. It is served as a rule with the khatta kabli channas (sour whole Bengal dried peas) or sour potato curry and a chutney.

Ingredients

  • 8 ozs (230 g) flour (maida)

Method

Warm the flour and mix bicarbonate of soda and the salt. Sieve into a bowl. Add egg, sugar, warmed yoghurt (curd) and enough warm water to make it into a soft dough. Continue kneading the dough till it does not stick to the fingers or to the sides of the plate or bowl. Apply ½ teaspoonful
