This sweet dish is very popular in Northern India. Orange-coloured carrots of indigenous origin, which are tender, are suitable for this purpose. A similar variety of carrot is available in London also. What is called a “foreign” variety of carrot in India, how ever, is not satisfactory. Proper shredding is also an important part of the technique. The shreds should be fine and as long as possible.
