Method

In selecting fully ripe mangoes do not include the over-ripe ones. Mix the pulp of the fully ripe and the half-ripe ones. Cook over very slow fire for 10 minutes. Add sugar and then cook over brisk fire, stirring constantly, until a teaspoonful of the mixture poured on to a cold plate jellies quickly or until the temperature reaches 222° F.
