Raspberries grow almost wild in some parts of India.

Selection of fruits:—The fruit used should be ripe and free from fungus disease. Gooseberries should be golden in colour.

Ingredients

  • 8 ozs (230 g) raspberries (gooseberries)
  • 1 tablespoonful

Method

Clean and wash the fruit; add water and simmer on slow fire till tender. Crush the raspberries with a wooden spoon, add sugar and simmer till it is dissolved. Mix lime juice and cook on quick fire until the temperature reaches 222° F or a teaspoonful of the mixture poured on to a plate jellies quickly.
