This dish, by itself, or with a dish of vegetables, makes an excellent family meal. It is very good for Sunday lunch, or for a small dinner party. It goes well with other dishes—for example, with any kind of saté—if you are entertaining on a larger scale.

Ingredients

  • 2 cups rice

Method

Soak the rice in cold water for 1 hour.

Clean and cut the chicken into serving pieces. Crush the shallots and garlic, and mix these and all the other ingredients together. Put the chicken and all the spices into a saucepan, and add just enough cold water to cover the chicken. Boil until tender (about 40-45 minutes).
