Among the most coveted dishes from Puerto Rico, pernil is a positively sumptuous preparation for pork shoulder. It’s marinated (ideally overnight) in garlic, citrus, and herbs, then slow-roasted at high heat to achieve a crisp chicharrón, or crispy pork skin. Traditionally, it’s cut from a whole roasted pig or lechon, which can be found on the island year-round. This recipe is deeply inspired by chef Maricel Presilla
