This brothy, healing sour soup, adapted from Yasmin Newman’s 7000 Islands, is among the Philippines’s best-known dishes. Green mango can be difficult to source, but tamarind paste or purée is a good substitution. Note that the flavor will be different—more puckering—with the tamarind, but it’s commonly used in sinigang recipes. Serve with steamed jasmine rice.
