Rabbit With White Wine, Mashed Potatoes and Olives

The Durigutti brothers were born in Rivadavia, in the east of the Mendoza province, where an old village nearby was famous for its delicious rabbit, a fairly uncommon meat for Argentinians. Years later, once they’d settled down in Las Compuertas, they decided to revive the childhood memory from Rivadavia and include it on the menu at their winery restaurant, re-interpreting a village tradition with versatile ingredients sourced exclusively from the estate itself.
