This a spicy vinegar that was made by our ancestors. It’s not super hot but will help to bring out other flavours, such as in the sofrito recipe above. For Puerto Ricans, the aroma is one of those that reminds you of grandma’s house.

Ingredients

  • 3 pineapples
  • 750 ml water
  • 250 ml apple cider vinega

Method

You will also need a piece of regular cloth or thin sacking, plus thread to tie it with.

Peel and core the pineapples, keeping all the elements. Wash the peels thoroughly, then put them in a large pot with the pineapple hearts (cores) and 3 cups of water.

Bring the water to the boil, turn off the heat and leave to infuse for at least 2 hours. Strain the water, discard the pineap
