The Hoeksche Rooie potatoes used in both these recipes are only grown on the Hoeksche Waard and have approved regional product status. Their flavour is greatly influenced by the sea clay soils in the area, making the potatoes renowned for their highly flavoured, creamy, and slightly sweet taste.

Ingredients

  • 750 g medium Hoeksche Rooie potatoes
  • 125 ml half-fat crème fraîche

Method

Bring the potatoes to the boil in salted water. Let them boil for about 10 minutes, then drain and leave to cool.

Peel the cooled potatoes with a sharp knife and then grate coarsely, either by hand or in a food processor. Transfer the potato to a mixing bowl, then add the creme fraîche and beaten egg.
